1 QT Water
1 C Salt
1/2 C Sugar
Various Fresh Herbs (Thyme, Sage, Rosemary..)
Fresh Peel, Lemon or Orange
Red Chili Flakes
Black Peppercorns
Garlic, Whole, peeled
White Wine (Optional)

Directions:
Directions:
Bring to a simmer all of the above ingredients. Allow to cool, then set chickens in brine, adding addtional water as needed to cover up to 2/3. Total time, minimum of three hours in brine, turning chickens every so often.
Pat dry and roast or rotisserie ready!
