1 loaf sourdough bread
1 pkg (10 oz) frozen spinach thawed and squeezed dry
6 green onions, thinly sliced
1 1/2 cups shredded Swiss cheese
1 cup diced ham or smoked turkey
8 eggs
2 1/2 cups milk
1 tbsp. Dijon mustard
1/4 tsp. each salt and pepper

Directions:
Directions:
cut bread into 1 inch cubes to make about 12 cups. In a large bowl,stir together bread,spinach, onions ,cheese and ham. Spoon into greased 9x13 glass baking dish.
In a bowl whisk together eggs, milk, mustard, salt and pepper. Pour over bread mixture and let stand for 20 minutes.
Bake in 375º oven until puffed and golden, about 45 minutes.
