"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
Ingredients:
8-10 apples (enough to fill a 4 qt. crock pot when sliced)
2 tsp. vanilla
1 tsp. cinnamon
1 Tbs. brown sugar
juice from one lemon

Directions:
Directions:
Core and slice apples, peeling is optional.
Dump all ingredients in crockpot, turn on low for 6 hours. Stir occasionally if desired. Mash them up and enjoy or if you want them even smoother just put them in a blender for about a minute. This applesauce is so amazing, you'll never want store-bought again!
This made about 5 c. applesauce.

Personal Notes:
Personal Notes:
I used organic apples so I didn't have a problem using the skins. Not sure if you'd want to with conventional apples or if you were making baby food.
I used Gala apples and they were pretty sweet, probably didn't even need the brown sugar.
