5 Pork Chops (1/2 Inch thick)
6 Tablespoons minced, fresh garlic
Salt and pepper to taste
Oil for frying

Garnish:
Chopped fresh cilantro

Mango and Brown Sugar Glaze

1 teaspoon cinnamon
1/2 cup orange juice
6 Tablespoons brown sugar
4 cups julienned fresh mango

Season pork chop with garlic, salt, and pepper. Lightly oil wok and fry chops on medium-high heat until all pink is gone. Drain on paper towels.

On a platter, place pork chop on the top of a bed of rice. Pour the Mango and Brown Sugar Glaze over the top of the chops and garnish with cilantro.

To make Mango and Brown Sugar Glaze:
Combine ingredients in a saucepan and let simmer until mangos are cooked, about 15 minutes. Set aside.
