3 c. milk
4 egg yolks, lightly beaten
2/3 c. sugar
1/4 c. cornstarch
1/2 tsp. salt
3/4 c. coconut, shredded
2 T. butter, softened
2 tsp. vanilla
1 pie shell, cooked
Whipped cream, optional
2 T. toasted coconut, optional

Directions:
Blend milk and egg yolks in a bowl, set aside. Mix together sugar, cornstarch, and salt in medium saucepan. Gradually stir milk mixture into sugar mixture. Cook over medium heat stirring constantly until mixture thickens and boils. Boil and stir 1 minute; remove from heat. Add coconut. Blend in butter and vanilla. Pour into cooked pie shell. Press plastic wrap onto filling. Chill 2 hours. Garnish with whipped cream and toasted coconut.
