8 sprigs chopped parsley
1/2 c bread crumbs
2 whole hard cooked eggs
1 T dried basil
1 1/2 # round steak, or carne asada steak
2 T. flour
3/4 c. water
2 strips diced bacon, or proscuitto
3 cloves minced garlic
1 T. parmesan cheese
1 onion, finely chopped
1/4 t. ground pepper
1 whole beaten egg
1/4 c. olive oil
Marinara sauce

Directions:

Place parsley, bread crumbs, garlic, cheese, onion, hard cooked eggs, diced bacon or proscuitto, and pinch of oregano - Mix well.
Pound steak on both sides and lay flat. Spread mixed ingredients on top of steak. Fold in edges and roll up. Tie with string or use toothpicks to hold together (string or heavy thread works best)
Dip rolled steak in beaten egg, then flour.
Heat oil in skillet, and brown steaks lightly on all sides.
Place in roasting pan. Add water and sauce until roast is half covered with sauce. Cover pan and roast in 350º for 45 minutes.
Cut into 1" slices and serve with pasta!

Bracciole takes a little time, but well worth it. Nana would make this for special occasions - it was considered a "side" dish with our main course of pasta!
