1 1/4 cups rice
2 1/2 cups water
4 cups milk
3-4 eggs
1/2 tea. salt
1 1/4 cups flour
1-2 tea. melted butter

Directions:
Directions:
Boil rice in water for 18 minutes.slowly, under lid. Add milk and simmer for another 15 minutes. Leave to cool. Beat eggs and add flour and salt. Melt butter and when cool add to flour mixture. Mix together with rice mixture. Fry small pancakes in butter and serve warm with preserved cherries, syrup, etc.

This was a recipe I learned from my Mother In Law "Lil White". It is very special and not too hard.
