1 c. butter, at room temperature
3/4 c. sugar
2 eggs
1 c. cooked mashed carrot
2 c. flour
2 tsp. baking powder
1/2 tsp. salt
3/4 c. shredded carrot

Orange Icing:
1-1/2 c. powdered sugar
3 Tbsp. butter, softened
2 tsp. grated orange zest
1 Tbsp. orange juice

Directions:
Directions:
Cream butter and sugar. Add eggs and mashed carrot. Whisk dry ingredients together and stir into creamed mixture. Stir in shredded carrot.

Chill for at least 2 hours, but can also be placed in an airtight container and refrigerated up to 3 days.

Preheat oven to 400º. Drop dough onto parchment lined baking sheets. Bake for 8 to 10 minutes. Cool completely on wire racks then frost with Orange Icing. Make icing by beating all icing ingredients until smooth.
