1 lb ground chuck, 1 lb italian sausage, 2 eggs, 2 cups shredded mozzarella, chopped medium red onion, 1-2 tbsp italian seasoning (optional: sliced mushrooms)

Directions:
Directions:
Preheat oven to 350. Mix well: ground chuck, ground italian sausage, eggs, onion, italian seasoning & 1 cup shredded mozzarella. Place in baking pan and shape into loaf. I like to then make a part in the middle, end to end, and place the remaining cup of shredded mozzarella inside and fold meat back over the top (essentially stuffing the meatloaf with cheese). You may also use any remaining cheese to sprinkle on the top. Italian seasoning is variable to taste, I do not measure it so the measurement listed for the recipe was an estimate. Bake for 50-60 minutes.

I originally started making this meatloaf as a "low carb" alternative to the traditional. I liked the combination of flavors so much that it is the only meatloaf I have made since.
