2 Pounds Lean Pork - Cubed
1 Large Yellow Onion
2 Cups Tomatillos - Diced
1 Small Can Green Chiles
1 Med Can Green Salsa - mild
2 Cloves Garlic
1/4 Cup Cilantro - Chopped
2 Tablespoons Olive Oil
Salt and Pepper to taste

Directions:
Directions:
Brown pork in skillet with olive oil, garlic. When brown add onions until well cooked. Add Tomatillos, Green Chiles, Green Salsa and reduce heat to low. Allow to cook covered for no less than 30 minutes. Check meat for tenderness. Add water - by the tbsp if needed. Add salt and pepper to taste. Serve hot

This is nice with warm tortillas served on the side along with Spanish rice and either black or refried beans. This can be pretty spicy.
