3 eggs
2 cups sugar
1 cup vegetable oil
2 cups grated zucchini
1 tbsp. vanilla
3 cups sifted flour
1 tsp. salt
1 tsp. baking soda
1 1/2 tsp. baking powder
1 tbsp. cinnamon
1 cup chopped nuts

Directions:

Beat eggs, add next four ingredients and mix well. Gradually add remaining ingredients, blending thoroughly. Pour into 2 large greased loaf pans. Bake at 325º for one hour or more.
