vegetable oil cooking spray
2 tbsp olive oil
3 oz thinly sliced prosciutto
1/2 medium onion, finely chopped
3/4 c ricotta cheese
1/3 c grated Parmesan
1/2 c frozen petite peas, thawed
salt and pepper
24 (2 to 3 inch long) sweet baby peppers

Preheat oven to 350º.

Place oven rack in the center of the oven and spray baking sheet with vegetable oil cooking spray and set aside.

In a medium skillet, heat the oil over medium-high heat. Add the prosciutto and cook until crispy. Remove prosciutto and drain on paper towels. Add the onion and cool until translucent and soft, set aside to cool.

Combine the onion, prosciutto, cheeses and peas. season with salt and pepper to taste.

Cut the stem off the peppers and remove seeds and veins. Using small spoon, fill each pepper with cheese mixture. Place on baking sheet and bake for 15 - 18 minutes, until pepper begin to soften. Let cool and serve.
