1 can (Qrt size) canned whole Tomatoes
1 tsp. salt
1 cup crushed Soda Crackers (can be rolled or just crushed by hand)
1 tbsp. butter or margarine

Directions:
Directions:
With a hand mixer or blender, chop up the Tomatoes (leave still slightly lumpy). Stir in the salt & crushed soda crackers. The mix should be not quite as thick as porridge but not runny either; add more cracker crumbs if needed. Pour into a greased casserole & cover the top with a thin layer of crumbs & a couple of slivers of butter or margazine. Bake at 350º for 40-45 minutes.

This is a super quick & easy vegetable dish, it's colorful on the plate, the crackers sweeten the tomato taste & it can be cooked ahead of time & then just warmed up.
