1/4 c. tiny Korean dried anchovies
1/2 c. olive oil, divided
1 c. garlic cloves, about 2 heads, peeled
1/4 c. rice, uncooked
2 1/4 c. milk
2 tsp. Korean red hot pepper flakes
Assortment of vegetables and/or bread

Directions:
Soak anchovies in 1/4 c. of oil, set aside. In a heavy saucepan, simmer garlic, rice and milk for about 45 minutes or until rice is tender. In a food processor, purée garlic rice mixture, and hot pepper. Add anchovy oil mixture, blend until smooth. Add 1/4 c. olive oil in a stream. Blend until smooth. If the dip is too thick, add a T. of water. Return the mixture to saucepan and bring to a simmer over moderate heat, stirring. Serve warm with vegetables and bread. Makes about 3 cups. *Anchovies are moderately low in calories and high in protein.
