2 (15 oz.) cans black beans, rinsed and drained
1 (17 oz.) can whole corn, drained
3 tomatoes, coarsely chopped
1 large avocado, peeled and chopped
1 large red onion, chopped
1/4 c. chopped cilantro
4 T. lemon juice
2 T. olive oil
1 T. red wine vinegar
1 tsp. salt
1/2 tsp. black pepper

Combine all ingredients, cover and chill at least 12 hours or overnight. Makes about 6 cups.
