1 cup all-purpose flour
1/2 tsp. baking soda
1/4 tsp. salt
1/2 cup Chunky Peanut Butter
1/2 cup butter or margarine
1/2 cup packed brown sugar
2 tbsp. sugar
1 egg
1 tsp. vanilla

6 squares Bakers's White Chocolate, coarsely chopped
1 cup pecans, coarsely chopped and toasted

Directions:
Directions:
Heat oven to 375º F (190º).
Stir flour, baking soda and salt together. Set aside.
Beat peanut butter, butter and sugars in a large mixing bowl for 4 minutes or until very creamy. Add the egg and vanilla, beat until fluffy, about 3 minutes.
Using a wooden spoon, stir in the flour mixture until thoroughly mixed. Stir in chocolate and nuts.
Drop by heaping tablespoonfuls onto 2 large ungreased cookie sheets about 1 inch (2.5 cm) apart. Flatten dough mounds with your fingers.
Bake for 9 to 10 minutes. Do not overbake. Cool 5 minutes; transfer to rack to cool. Store cookies in airtight containers.
Prep time: 15 minutes
Baking time: 10 minutes
Makes 2 1/2 dozen cookies.
*To toast pecans, spread nuts in a single layer on a cookie sheet. Bake at 350º F (180ºC) for 10 minutes. Cool in a pan on wire rack. Store in refrigerator until ready to use.
