2 qts vegetable shortening
24 whole chicken wings and drumsticks
4 eggs
1/4 c heavy cream
2 tbsp cayenne pepper
2 tbsp salt
1 tbsp black pepper
2 c flour
1 c corn starch

Spicy Butter Sauce
1 c hot sauce (recommended Frank's Red Hot)
1 c butter
1 lemon, juiced
1 small bunch basil

Directions:

Heat vegetable oil in a deep-fryer until thermometer reaches 375º.

In a large bowl, whisk together eggs, cream, cayenne, 1 tbsp salt and black pepper. In a paper bag, combine flour, cornstarch and 1 tbsp salt.

Place chicken in egg mixture an toss well to coat. Drop chicken in the bag of flour mixture. Shake well to coat. Set on wire rack to let coating set, 20 minutes.

For the sauce: In a small saucepan, bring the ingredients for the spicy butter to a simmer. Remove from heat and let basil infuse in sauce for 15 minutes. Remove basil.

When wings are fried, toss in Spicy butter sauce.
