1 small (1 1/2-2lb.) pork roast, cut into med-small chunks
2 cans (14oz) chicken broth
2 stalks celery, dice large
4 cloves garlic, diced
1 large onion, diced (divided)
1 large can yellow hominy
? green chili- diced
pinch oregano
1 bunch cilantro, chopped, divided
4 corn tortillas, torn into pieces
1 Tbs. ground cumin
? 1 Tbs cayenne pepper
salt / pepper
sharp cheddar chees, shredded
3-4 limes in wedges

Directions:
In slow cooker combine pork, broth, celery, garlic, red pepper & half diced onion. Cook on high, 4-5 hours until pork is done. Add water as needed to keep pork in plenty of liquid while cooking. ! Don't let it dry out!
Add hominy & liquid, gr. chilies, oregano, 1/3 c cilantro, corn, tortilla pieces, cumin, cayenne, salt & pepper.
Mix all ingredients well & cook another 1- 1 1/2 hours. Add water as needed to keep mixture soupy but thick.
Serve:Posale hot in bowls. On a separate large plate place onion, cilantro, cheese, lime wedges, scallions, large chopped lettuce, shredded fine cabbage, shredded onion, and fine radishes.
