1 loaf Italian bread
1 lb. ripe tomatoes
1 red onion
1/2 c. olive oil, divided
2 T. basil, chopped
1 T. cilantro, chopped, optional
1 clove garlic, chopped
Salt and pepper to taste

Directions:
Directions:
Cut bread into thick slices. Chop tomatoes into small cubes; finely dice red onion. Combine tomato and onion with 1/4 c. or more olive oil, chopped basil, cilantro, garlic, salt and pepper. Brush remaining olive oil on bread and lightly toast in a 350ºF oven for 5-10 minutes. While still hot, top each piece with some tomato mixture. Serve warm. You can also top with strips of fresh basil.
