1/2 cup brown sugar
1/3 cup broken cashews
1/2 tsp. salt
1/4 tsp. ground ginger
2 lbs. sweet potatoes, cooked, peeled and sliced crosswise thick
1 8 oz.can peach slices, drained well
3 tbsp. butter

Directions:
Directions:
Combine brown sugar, cashews, salt and ginger. In a 10 X 6 X 2" baking dish, layer 1/2 sweet potatoes, 1/2 peach slices and 1/2 brown sugar mixture. Repeat layers. Dot with butter. Bake covered at 350 degrees for 30 min. Uncover and bake about 10 min. more. Spoon brown sugar syrup over potatoes before serving.
