9 cups chicken stock
3 cups chopped celery
2 cups chopped onion
pepper to taste
salt to taste
1 cup flour
1 cup milk
1 lg. box Velveeta
1 qt. half and half
1 lb. bacon, browned and crumbled
5-6 lb. potatoes, baked, cooled and cut up with skins on.

Combine stock, onion & celery in large soup pot and cook till tender, about 15 - 17 min. Add pepper and salt. Whisk milk and flour together, then slowly add to soup mixture stirring constantly. Add remaining ingredients and stir until cheese is melted. Do not. boil.

This makes a big pot of soup and I never think potatoes freeze successfully so be sure to have lots of hearty appetites on hand to share this with!
