1 to 2 lbs. chicken (I use boneless, skinless breast and thighs)
2 cans navy or Great Northern beans
16 oz. jar salsa, mild, med. or hot
2 tsp. cumin
Salt and pepper to taste
8 oz. Monterey Jack cheese with jalapeņo peppers, cubed

Directions:
Directions:
Boil chicken until done, about 30 minutes if thawed, and cut into bite size pieces. Save 1 c. chicken broth and return it and chicken to the pot. Add beans, salsa, cumin and salt and pepper to taste. Cover and cook on medium-low heat for 25 minutes. Add cheese and continue to cook until it melts. You can add water if it becomes too thick. Serve hot with sour cream, chips and extra cheese.
