3 large eggs
1/3 cup sugar
1/2 cup fresh lemon juice (2 lemons)
6 TBL. butter cut into small pieces
1/2 tsp vanilla extract
Directions:

- In medium saucepan whisk together eggs and sugar until light in color
- Add lemon juice and butter
- Cook over medium heat, whisking until butter is melted
- Continue whisking until mixture is thickened
- Stir in extract
- Cool and refrigerate to thicken
