2 lbs peeled and deveined shrimp
1/2 lb crab meat
5 slices of bacon
1/2 cup diced smoked ham(smoked ham hocks)
2 Tablespoons flour
2 cups finely chopped onion
1 cup finely chopped celery
1/2 cup finely chopped green pepper
1/2 teaspoon lemon rind
1/2 lemon
1 head/pod of garlic, finely chopped
Few dashes of Worcestershire & Tabasco sauce
Pinch thyme
1 bay leaf
Salt and pepper to taste
4 cups water (boil ham hocks in water)
1 lb fresh okra
2 Tablespoons bacon fat
1/4 cup chopped parsley
1/4 cup sliced green onion tops
Cooked rice

Directions:
Directions:
Fry bacon in large skillet, remove bacon once cooked. Add ham to grease, cook until browned, remove ham. Add flour to grease and cook over low heat, stirring constantly to make a browned roux.

Gradually add onions and cook slowly until well browned and onions are reduced to pulp. Add celery, green pepper and lemon rind. Trim white flesh from lemon, chop lemon and add to onion mix. Add garlic, Worcestershire, Tabasco, thyme, bay leaf, salt, pepper and water. Add crumbled bacon and ham. Cook slowly for 45 minutes.

Meanwhile, clean and trim okra and cook in bacon grease, stirring to prevent scorching or browning-it will be done when okra is no longer ropy.

After 45 minutes, add the cooked okra and continue to cook for 20 minutes. Add shrimp and crab meat. Bring to boil and cook 5 minutes--long enough to cook shrimp. Add parsley and green onions. Serve over cooked rice.
