Ingredients:
Ingredients:
8-10 red potatoes
1 large onion
3-4 celery stalks
2-3 hard boiled eggs
Mayo
Milk
Salt & pepper

Directions:
Directions:
Boil the potatoes until when you insert a sharp knife into the potatoes, it comes out easily (about 15 minutes boiling pretty hard).

Peel the potatoes when cool and dice in medium squares, chop the onion, celery, and cooked egg, add to the chopped potatoes.

Mix together in a jar with a lid, about 2-3 tablespoons of mayo, not salad dressing! Then add enough milk to the mayo that when you shake it up the consistency is like a thin milk shake. Pour over the potato mixture, stir and let it sit in the fridge for several hours. When ready to serve, add a little paprika for color.

Another standard from Mom's kitchen--and I will make it at least one time over the summer. Great for cook-outs with burgers, pork steaks, fried chicken, almost anything.
