1 box prepared stove top stuffing mix
1 lb. scallops, fresh or frozen
1/3 cup chopped onion
1/3 cup mayonnaise
2 tsp. lemon juice
1 cup milk or cream (slightly more if too dry)
1 cup mozzarella cheese

Directions:

Mix together all ingredients, spread in greased casserole, sprinkle with a bit more cheese if desired. (should be quite moist) Bake at 350ºF for about 30 min.
