2 tbsp. Olive oil
1 c. chopped yellow onion
2 Cloves garlic, minced
3/4 lb. hot pork sausage
3/4 lb. sweet pork sausage
1 - 28 oz can crushed tomatoes
1 - 6 oz can tomato paste
1/4 c chopped fresh flat leaf parsley
1/2 c. chopped fresh basil
1/2 lb lasagna nodules
15 oz ricotta cheese
4 oz goat cheese
1/4 c. red wine, optional
1/4 - 1/2 c. chicken broth
1 c. grated Parmesan cheese
1/4 c. grated Parmesan cheese
1 extra large egg, beaten
1 lb fresh mozzerella cheese, thinly sliced.

Preheat oven to 400º.

In a large bowl filled with hot tap water, add uncooked noodles and let sit for 20 minutes. By 20 minutes, they should be a little tough.

Heat oil in pan. Add onions until translucent. Add garlic. Add sausage and brown. Add red wine (optional). Add tomatoes, tomato paste, chicken broth to thin just a bit, 2 tbsp parsley, basil, salt and pepper to taste. Simmer uncovered until thick.

In a medium bowl, combine ricotta, goat cheese, 1 cup parmesan cheese, egg and 2 tbsp parsley, salt and pepper.

Ladle 1/3 of the sauce to 9 x 12 x 2 baking dish. Add layer as follows: Pasta, mozzarella, spoon ricotta mixture and drizzle sauce. Make two layers. Finish with sauce and add 1/4 cup parmesan cheese to top.

Bake for 30 minutes or until lasagna bubbles.
