6 tbsp. Unsalted Butter, plus more for pie plate
1 1/2 c. Flour, I use cake flour
1 1/2 tsp. Baking Powder
1/2 tsp. Salt
1 c. Sugar, plus 2 tablespoons of raw sugar
1 tsp. Vanilla
1 Large Egg
1/2 c. Milk
1 lb Fresh Strawberries, hulled

Preheat oven to 350º. After 10 minutes reduce to 325º.

Butter a 10" pie plate or 8 x 8 square pan.

Shift together flour, baking soda and salt.

Put butter and 1 c. sugar in mixer and beat until fluffy. Reduce to low; add egg, milk and vanilla. Gradually add four mixture. Pour batter into pan and then drop strawberries hulled side down on top. Sprinkle with additional sugar. Bake at the 350º for 10 minutes and then reduce to 325º for another 50 - 60 minutes. Serve with ice cream, or my favorite homemade whipped cream.
