6 c. sliced zucchini
1/2 c. chopped onion
1 can cream of chicken soup
1 c. sour cream
1 carrot shredded
8 oz. herb stuffing
1/2 c. butter melted

Directions:
Directions:
Lightly steam zucchini for 5 minutes, drain. Combine soup, sour cream and carrots. Add zucchini. In separate bowl combine stuffing and melted butter. Layer bottom of casserole with 1/2 of the stuffing mixture then add zucchini mix. Top off with remaining 1/2 of stuffing. Bake at 350º for 25 minutes.
