Ingredients: 1/2 cup tequila 1/2 cup fresh lime juice 1/4 cup orange juice 1 package fajita seasoning mix 1 jalapeno, seeded and minced 1 clove garlic minced 1 teaspoon salt 1 package boneless skinless chicken breast, cut in strips 2 packages mixed greens 1 can black beans, drained and rinsed 1/2 cup chopped green onion 1/2 cup light olive oil 1/2 cup fresh lime juice 2 tablespoons honey 3/4 teaspoon salt 1/2 teaspoon garlic powder Flavored tortillas cut into strips

Directions:In a small bowl, whisk together tequila, lime juice, orange juice, fajita seasoning mix, jalapeno, garlic and salt. In a large dish or plastic bag, combine chicken, tequila mixture. Cover and refrigerate at least 4 hours, up to 8. Remove chicken and discard marinade. Grill 3-4 minutes per side or until chicken is done. In a large bowl, combine baby greens, beans, green onion, and avocado and chicken. Add desired amount of Honey - Lime Dressing tossing gently to coat. Divide baked tortilla strips evenly among serving plates. Top each with salad mixture and sprinkle with chopped avocado. Serve immediately.
Dressing...whisk oil, lime juice, honey, salt, and garlic powder together.
Baked Tortilla Strips: Preheat oven to 400 degrees and spray with non stick cooking spray. Arrange tortilla strips in an even layer over prepared baking sheet. Spray tortilla strips lightly with nonstick cooking spray. Bake for 4 to 5 minutes, or until browned and crisp. Cool completely. |
