1 cup butter or margarine, softened
1 cup packed dark brown sugar
1/2 cup dark molasses
4 cup all-purpose flour
2 1/2 teaspoon ground ginger
1 1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon baking soda

Beat butter and sugar with electric mixer until light an fluffy. Beat in molasses. Combine remaining ingredients; gradually mix in until blended. Halve dough; flatten into 1 inch thick rounds. Chill in plastic wrap till firm. (2 hours in refrigerator or 30 minutes in freezer.)

On a lightly floured surface roll dough to 1/4" thickness. (If dough is crumbly, warm with hands and add a little water before rolling). Cut with floured cookie cutter. Place 1" apart on ungreased cookie sheets. Chill and re-roll scraps as needed. Bake 350 degrees for 10-12 minutes, (adjust to how soft you like your cookies). Cool for 2 min. and transfer to wire rack. Cool completely before decorating.

I use a floured pastry cloth and rolling pin cover as the dough can be a little sticky. If dough tends to stick to floured surface, use thin metal spatula to lift and place on cookie sheet. Dough can also dry out as it sits, so add small amounts of water as needed. These cookies make cute ornaments by punching a hole into the top of each cookie with a drinking straw before baking. Hang with string licorice.
