2 large cucumbers
6 to 8 plum tomatoes
2 medium sweet onions
1/2 c. apple cider vinegar
1/2 c. water
1/2 c. sugar
1 tsp. salt
1/2 tsp.ground black pepper

Directions:
-Peel cucumbers-quarter down length- optional:cut away seeds - slice into 3/8 to 1/2 inch slices - put in a deep bowl large enough to hold all of the cucumber, tomatoes, and onions
- cut tomatoes in 1/2 lengthwise - slice into 1/2 inch thick slices -add to bowl - optional: blanch tomatoes in boiling water for a couple of minutes and remove and discard peel before cutting and slicing
- cut onion in in 1/2 and then into wedges - add to bowl
- mix cucumber, tomatoes, and onions until evenly distributed
- in a separate bowl mix remaining ingredients then pour over cucumber, tomatoes, and onions add additional water until covered - stir well
optional: put all ingredients into a seal tight container and add water until contents are covered and cover tightly - hold cover and shake to mix.
Keep in refrigerator for at least one day before serving.
