Ingredients: 2 medium potatoes, thinly sliced shopping list 1C sliced small leeks (about 1/8" slices) shopping list 3 Tbl water shopping list 1 (10 ounce) round pre-baked thin pizza crust or Italian bread shell shopping list 1/2 C sour cream shopping list 2 ounces Shredded swiss cheese shopping list 2 tsp chopped fresh rosemary (1 isp dried) shopping list 1/4 tsp salt shopping list 1/4 tsp pepper

Directions:1. Heat oven to 425º
2. Place potatoes in a microwave safe dish, top with leeks; sprinkle with 3 Tbl water
3. Cover and microwave on HIGH until potatoes are fork tender (3 to 6 minutes)
4. Place pizza crust on on cookie sheet and roll out to cover entire sheet. Spread with sour cream to within 1/2 inch of edge.
5. Arrange potato slices and leeks over sour cream
6. Sprinkle with cheese, rosemary, salt and pepper
7. Bake for 8 to 10 minutes or until cheese is melted |
