1 medium acorn squash
1 small butternut squash
1 or 2 medium zucchini (green or yellow or both)
3 carrots
1 large onion
3 or 4 celery stalks
2 cups sliced mushrooms
2 or 3 garlic cloves (or 2 spoonfuls of minced jarred)
1 large bunch fresh cilantro
2 large cans diced tomatoes (or equivalent in fresh stewed or blanched tomatoes)
2 large cans crushed tomatoes (can use tomato sauce or spaghetti sauce too)
season as desired with salt, pepper, paprika, garlic powder, onion powder, beef base, Italian seasonings or oregano

Wash and peel vegetables and prepare as desired either diced or chopped chunky.

In a large soup pot saute onions, carrots and celery for a few minutes in choice of vegetable oil or butter. Then add garlic and some seasonings.

Add in butternut and acorn squash and let saute for a few minutes.

Add zucchini and mushrooms and saute for another few minutes.

Add all tomatoes and sauces and bring to a simmering boil.

Adjust seasoning and add chopped fresh cilantro.

Continue to simmer until squash is tender and flavours are nicely blended.

To be served as a sauce on your favourite pasta. Vary it up with different proteins, Italian sausage, chicken breast, or meatballs made with ground beef or turkey breast.

Freeze or can the leftovers for lunches or quick meals. Great to throw into slow cooker for the day and supper is ready to go!

This recipe can be played with. Any vegetables you have on hand, small batch or large! The main flavour component being the squash/cilantro combination and the tomato base.
