Salad:
2 bunches leaf spinach, stemmed, washed & dried well
1 pt. of fresh blueberries
2/3 c. blue cheese, crumbled
1/2 c. toasted pecans, chopped


Blueberry Vinaigrette:
1 shallot, minced
1 tsp. salt
1/3 c. raspberry vinegar
1/2 pt. fresh blueberries
3 tbsp. sugar
1 c. vegetable oil

Directions:
Directions:
Prepare vinaigrette & set aside. In a large bowl, combine spinach, blueberries, cheese & pecans; toss with generous amount of vinaigrette.

Blueberry Vinaigrette: Combine all ingredients in an electric blender & blend until smooth.
