Salad:
Red New Potatoes (Allow one red New potato for each serving)
green onions
hard boiled eggs, minced
For every potato, there must be one green onion, and one hard boiled egg!
salt & pepper to taste

Sauce:
(may add more or less of mixture, according to your taste.)
2 parts Hellman’s Light Mayonnaise
1 part light sour cream
1 heaping tsp. of Durkee’s or Grey Poupon Mustard

Directions:
Directions:
Salad: Boil potatoes until tender, drain well, peel & cube. Add thinly sliced green onions to warm potatoes, mix. Add minced eggs, mix. Add sauce (see directions below), salt & fresh ground black pepper to taste. Mix, store covered in refrigerator. Best if made several hours before serving.

Sauce: Mix together sauce ingredients & add to vegetable/egg mixture. To further reduce calories, plain yogurt may be substituted for part of mayonnaise or sour cream.
