Country ham slices (approx. 1 slice per person
2 cans evaporated milk (pet or carnation)
buttter

Directions:
Directions:
Place country ham slices in skillet and fry until done. Butter may be needed for browning and richness. To the drippings add canned milk slowly while bringing to a boil. Stirring until slightly thickened. Serve over biscuits or toast.

Adding butter to ham while frying makes more drippings and richer gravy. This is Grandaddys (albert lairson) recipe. The true red eye gravy is made with water and coffee. But our family prefers this one.
