Thick cut chuck roast
Salt & Cracked Pepper
Your favorite accompaniments (potatoes, onions, carrots)

Directions:
Directions:
Season meat with salt & pepper. Basil is also very good with this dish. Brown meat on both sides in heavy skillet. Add small amount of water to skillet, cover, and continue cooking roast in skillet for approximately 2 hours.

Add carrots, onions, and potatoes in the last hour of cooking time.

Modern day version: After browning meat in skillet, transfer to a crock pot and cook with vegetables.
