3 lb. ground pork

4 large heads sour cabbage

4 large onions, chopped
4 cloves garlic, chopped

Directions:
1. Parboil rice and drain. Saute onion and garlic in butter, about 10 minutes. Mix meat, rice, onions, and garlic with hands; add salt and pepper to taste.

2. Trim the large rib on each leaf, carefully. Fill 1/3 of leaf with meat mixture. Roll, folding in sides as you roll. Continue making rolls until meat mixture is gone. Cut remaining cabbage leaves into small pieces.

3. In a large roasting pan (with lid), place a layer of chopped cabbage and then a layer of sarma, beginning with the largest rolls. Continue to alternate layers, finishing with cabbage on top. Add water to pan, about 1/2 to 3/4 the depth of pan. Cover. Bake at 325ºF for about 3 hours, or until cabbage is tender. Add smoked sausage, if desired, on top for the last 45 minutes of cooking time.
