"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

4 tablespoons sugar

Ruebel:
1 1/2 cup sugar

4 tablespoons butter
Cream

Directions:
Sift flour, powder and sugar. Add shortening. Mix with fingers until fine crumbs. Add cream and egg. Mix well and pat out on fairly large baking sheet lined with parchment paper. Push up dough around the edge to create a crust that will hold the fruit on. Put on a layer of fruit: cherries, plums, apples, apricots or any fruit that is in season.

Mix first three ingredients of Ruebel well. Rub in the butter and enough cream to make coarse crumbs. Sprinkle thickly over the fruit. Bake in 375ºF oven for 25-30 minutes. Freezes and thaws very well.

Personal Notes:
I prefer a lot of Reubel on my Platz- because it is the best part!!! I have doubled the measurements in the recipe but feel free to cut in half, if you wish.
