2 lb. roast cut in chunks
1 t. salt
2 T. oil
1 onion, finely chopped
3 garlic cloves
3 large tomatoes, peeled and chopped
1 red pepper, chopped
12 green olives
2 t. vinegar

Directions:
Directions:
Place beef in pot with salt, pepper, and water. Boil and simmer 1 ½ hours. Remove, cover, and simmer until liquid is absorbed. Saute garlic and simmer tomatoes 5 minutes. Add all other ingredients and simmer 10-15 minutes. Add beef and cook for 10 minutes. Serve with warm flour tortillas to roll with sour cream.
