2 tbsp. oil
2 cloves garlic, crushed
1 lb. stewing beef, cut into chunks
2 - 16 oz. cans beets, with juice
4 medium potatoes, peeled and cubed
1 - 10 1/2 oz. can condensed beef broth
1/2 can water
1 c. sour cream

Directions:
Directions:
Heat oil in a Dutch oven; brown garlic and beef over high heat for 5 minutes. Drain off fat. Add beets and juice, potatoes, broth, and water. Mix thoroughly and bring to a boil. Cover and reduce heat. Cook for 25 minutes. Just before serving, stir in sour cream. I used pickled beets, the vinegar in it gave it a good tang.
