2 pounds large fresh scallops
1 pound of honey-bacon

2 T. olive oil
2 T. honey
1 T. vinegar
2 T. Dijon mustard

Directions:
Directions:
1. Preheat oven to 425°F
2. Mix ingredients for dressing together until smooth
3. Coat scallops in dressing
4. Take a 1/2 a slice of bacon and wrap around scallop tightly, secure with toothpick.
5. Repeat and cover all seasoned scallops with bacon and secured with toothpicks.
6. Place all covered scallops on a tinfoil-lined baking sheet, and brush on remainder of dressing.
7. Bake for 15-20 minutes, or until the bacon is fully cooked.
8. Serve and enjoy!
