2 cups whipping cream
1/3 cup sugar (or stevia)
5 egg yolks

Directions:
Scald cream (bring it just to a boil). Add sugar and stir to dissolve. Remove from heat. In a large bowl, beat egg yolks. Whisk cream very slowly into yolks. Pour mixture into an 8" shallow bowl or 6-8 ramekins. Bake in a large pan with 1" (2.5 cm) of water at 325º F (160º C) for 30-40 minutes. At the end of 30 minutes give a "shake" test and continue to cook if the custard does not look firm. Cool. Refrigerate 12 hours. Sprinkle 1/4" (1 cm) brown sugar on top. Broil until it melts and is golden brown. Egg whites may be frozen in sealed containers for later use.
