2 eggs, lightly beaten
1 tsp. salt
dash of pepper
4 whole boneless chicken breasts
1 cup fine dry unseasoned bread crumbs
1/2 cup vegetable oil
4 cups tomato sauce
1/2 tsp. basil
1/2 tsp. oregano
1 tbsp. parsley
dash of garlic powder
2 tbsp. butter
1/2 cup grated Parmesan cheese
8 oz. Mozzarella cheese, sliced or grated

Directions:
Directions:
Combine eggs, and salt & pepper. Dip chicken breasts in egg, then in breadcrumbs. Heat oil in skillet and brown chicken breasts on both sides and place them in a casserole dish. In saucepan, heat tomato sauce and herbs until boiling, let simmer 10 minutes. Stir in butter. Pour sauce over chicken. Sprinkle with Parmesan cheese and cover with aluminum foil. Bake at 350º for 30 minutes. Remove foil, top with Mozzarella cheese and bake uncovered for 10 minutes.
