2 c. whipping cream
1 5 oz. pkg. Boursin cheese with herbs
3 lbs. new red potatoes (unpeeled), scrubbed and thinly sliced
1 1/2 T chopped fresh parsley

Directions:
Directions:
Preheat oven to 400º
Butter 9 x 13 dish. Stir cream and cheese in sauce pan over med. heat until smooth. Arrange half of potatoes in the greased dish and season with salt and pepper. Pour half of cheese mixture over. Arrange remaining potatoes in dish, season with salt and pepper. Pour remaining cheese mixture over potatoes.
Bake approx. 1 hour until top is golden brown and potatoes are tender when pierced with knife,
Sprinkle with fresh parsley and serve

This is an elegant dish and goes well with beef. Don't make this too far in advance, as the potatoes will turn brown.
