2 cans asparagus, drained and chopped
6 eggs
1 cup milk
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
2 cups crushed Ritz crackers
1 teaspoon salt
1 teaspoon pepper
2 teaspoons butter or margarine

Directions:
Directions:
Preheat oven to 350 degrees. In large bowl, beat eggs. Add milk, cheese, crackers, asparagus, salt and pepper. Mix well with a fork. Spoon mixture into a 9” X 11” casserole dish. Melt butter and drizzle over the soufflé. Bake 35 minutes.
