Large Shrimp (cleaned and deveined)
2 C. Pina Colada Mix (don't forget the Rum!)
2 Cloves of Garlic
1 Bag of Coconut (toasted)

Directions:
Place the Shrimp in the marinade of Pina Colada Mix & Garlic cloves. I used a zip lock bag. Don't marinade for more than 15 min. or the Shrimp will "cook" in the back. Place on the grill for a couple of minutes on each side and brush some of the marinade on them while they cook. Remove from grill and roll in toasted coconut. serve immediately. To make toasted coconut, spread the coconut evenly on a baking sheet and bake in a 325 oven for about 10 min. Watch closely and stir while baking.

I would serve with grilled pineapple slices that I drizzle with honey, and white rice.
