1 lb Italian sausage or ground beef
1/2 cup chopped onion
1/2 cup chopped celery
1/2 cup chopped carrots
1 16 oz can diced tomatoes
1 6 oz can tomato paste
1 tsp salt
1/2 tsp oregano crushed
1/4 tsp pepper
10 0z lasagna noodles
3 cups ricotta cheese
1/2 cup Parmesan or Romano cheese
2 beaten eggs
2 Tbsp snipped parsley
1/4 tsp pepper
16 oz mozzarella cheese thinly sliced

In skillet cook sausage, onion, celery and carrots till meat is lightly browned. Drain off excess fat. Stir in tomatoes, tomato paste, salt, oregano and the first 1/4 tsp of pepper. Simmer uncovered for 30 minutes stirring occasionally.

Cook lasagna noodles and drain well.

Combine ricotta, Parmesan, eggs, parsley, and remaining pepper.

Place 1/2 noodles in a greased 9 x 13 baking dish. Spread with 1/2 cheese filling then 1/2 of mozzarella then 1/2 of meat sauce. Repeat layers.

Bake uncovered 375º for 30 minutes

Let stand for 10 - 15 minutes. Cut in squares.
