3 c. ( 500g) grated zucchini
1 onion, grated
4 eggs
1 1/2 c. grated cheese
1/2 tsp. salt
3/4 c. self - raising flour
pepper
fresh herbs and tomato slices or cherry tomatoes (halved)

Directions:
Directions:
Grate zucchini and onion and place in a fairly large mixing bowl with eggs, cheese, and salt.
Mix well with a fork.
Add flour (sifted) and as much pepper as you like.
Chop in any fresh herbs you have around (I often use thyme, dill, and chives).
Pour mixture into a well buttered quiche dish or pan. Do not fill more than 2/3 full as mixture rises.
Top with slices of tomato or cherry tomato halves.
Bake at 200º C (degrees Celsius) for 25 - 40 min. until center firm and top golden brown (I usually bake for full 35 - 40 min.).
Leave to stand for 5 min. before cutting.
